Is there a way to generate larger maps? I can't even figure out how to download the offline version, so I'm basically clueless.

You need the offline version for larger maps.  Alternatively, you can stitch a large map together from many small maps, but some of the projections change when you change the midpoint, so it will not work for all projections.

To get the offline version, go to http://www.diku.dk/~torbenm/Planet/ and download the zip file by pressing the link.  If you use Windows, you also need to download the windows executable.  If you use Linux or MacOS, you are expected to compile the program yourself.

The offline program works from the command line and uses command line parameters to determine size, output file, projection, and so on.  See the manual for details.

Alternatively, you can download a Windows-based GUI for the planet generator, such as https://toolslib.net/downloads/viewdownload/73-vpplanetgenerator/ or https://github.com/kyleady/TPlanet/releases, but note that these may not use the latest version of the map program or support all features of the offline version.
